Most restaurant owners check today egg rate on their phone, then call their usual supplier and pay what they're quoted — which is usually NECC wholesale rate plus the supplier's margin. That's not the cheapest way to buy eggs.

Restaurants and hotels buying 20+ trays per day have real leverage in India's egg market. Here's how to use it.

What "Below Today Egg Rate" Actually Means

Today egg rate published by NECC is the benchmark wholesale price. It's the price a mid-sized distributor pays to a farm or production hub wholesale market.

Volume buyers — restaurants, hotels, cloud kitchens, catering companies — can negotiate below this benchmark by:

• Going directly to the wholesale market instead of a middleman
• Buying in larger quantities that give farmers guaranteed volume
• Locking in forward contracts during summer low-price periods
